Our traditional classic styles of cold-smoked and hot-smoked salmons, and our original and innovative seasoned cures have been repeatedly top-rated by national publications such as The New York Times, Food and Wine, Fine Cooking, Los Angeles Times, and the Boston Globe, among others. Occasional and seasonal specials include Sable, Trout, Mackerel, Bluefish, Scallops, and Finnan Haddie. Weekly retail specials include braises of game, meats, and poultry.
